Bean and Cheese Enchilada with a Grilled Avocado


Bean and Cheese Enchilada

2 tbsp refried beans
1/2 cup shredded mexi cheese
1 tortilla
4 oz enchilada sauce (I prefer the chipotle red)
*these are estimations, I don't usually work with measuring tools.

Simple recipe here-
Prepare your refried beans
Warm up your tortilla
Preheat your oven to 375°
Add your beans, a little more or less, however you prefer. Place them off center
1/4 cup cheese
2 oz enchilada sauce
Wrap it up
Add the remaining sauce and cheese on top
Bake in the oven for five minutes or til the cheese melts. SERVE!

Where's the beef?
Add a couple ounces of cooked ground chorizo

Looking at that Grilled Avocado?

1 firm avocado, peeled, halved and deseeded
Vegetable oil
Sea salt
Lime juice
1 tbsp sour cream
1 tbsp salsa
1/8 cup mexi cheese

Brush the avocado with the oil, sprinkle sea salt and lime juice.
Sauté the top and bottom of the avocado for about 5 minutes.
Plate the avocado.
In the seed hole, place the salsa, sour cream and sprinkle the cheese on top. SERVE!

Boiler wraps


Based on a recipe from the Boiler Market
I usually use a pita pocket, but you can use any wrap of your choice really.
Spread about 2 tbsp or so of hummus on your bread.
1 tbsp chopped onion
2 tbsp chopped green pepper
1 tbsp chopped tomato
1 tbsp chopped steamed or boiled artichoke hearts
1 tbsp feta
Fill to your desire with lettuce
2 tbsp balsamic vinegarette
Wrap
SERVE!

Where's the beef? I don't know on this one. Try 1 oz of a meat and let me know how it goes.
